Beef Stroganoff

Ingredients:

cooking spray
2 cloves garlic, minced
1 pound lean eye round, cut into 1-inch cubes
1 6-ounce can tomato sauce
1/2 cup dry red wine
1 cup fresh mushrooms, sliced
1 bay leaf
1/2 cup fat-free sour cream
salt and pepper to taste

1. Coat bottom of large nonstick skillet with cooking spray and saute garlic for 1 minnute, until soft. Add meat and brown, stirring, for 3 minutes

2. Add tomato sauce, wine, mushrooms, and bay leaf and simmer, covered, over low heat for about 1 1/2 hours.

3. Turn off heat and stirin sour cream. Add salt and pepper to taste.

Makes 4 servings


SERVING GUIDELINES

FOR BYPASS:
Weeks 3-6: Puree 2 ounces cooked meat with 2 tablespoons sauce.
Weeks 7-9: Chop 2 ounces cooked meat and top with sauce Weeks 9+: Serve 2-3 ounces meat with sauce (be careful take very small bites, and to chew well, bites should be no bigger than your thumbnail)
